January is National Hot Tea Month. Drink your hot tea languorously, reading your favorite magazine or catching up on a favorite book as I do. Have you ever read George Orwell’s A Nice Cup of Tea? Though I agree with several of his points in his famous essay about how to brew the perfect cup of tea, we both can agree that we take our tea and its brewing process very seriously. And to have a nice cup of tea, one must have the perfect pairing. Bigelow Tea’s “Constant Comment” Black Tea has been a favorite of mine and my family’s for many years, and my choice for enjoying when escaping the chill of winter.

Constant Comment tea is perfect for a chilly afternoon. I have been enjoying two cups a day, one in morning and one in the late afternoon. If you love a the smell of spices and orange rind as you are brewing and enjoying your tea, then you will fall in love with Bigelow Tea’s Constant Comment. I spend the majority of my month of January working and preparing for the high season on the eastern end of Long Island, thus much of my time is spent indoors, minus a few trips in to New York City.

Bigelow’s Constant Comment is my and my family’s #1 tea because each sip is so comforting and aromatic. My favorite is opening each tea pouch when that unmistakable scent of spicy aromas greet you. Every time I purchase a new box, I know the quality and taste will be splendid.

I purchase Bigelow Tea’s “Constant Comment” in aisle 12 at Walmart in Riverhead, or the Bread, Cereal, and Coffee aisle. This particular black tea goes quickly so stock up as soon as you see it. The essence of orange and sweet spices are so soothing. I love to sweeten by tea with local Long Island honey and add a dash of steamed milk. Another trick is to add the milk to the tea cup, and place the tea bag in advance as you wait for your water to heat.

The perfect pairing for a nice cup of tea is my Lavender & Rosemary Scones, that are just a tad sweet, earthy, and fragrant. They are also a touch more moist than traditional scones, making them a perfect compliment for a spot of a tea any morning or afternoon. Bigelow Tea Constant Comment Collective Bias

Lavender & Rosemary Scones

Ingredients

  • 2 cups AP flour
  • 1 tablespoon (T) baking powder
  • 1 cup heavy cream, plus 2 tablespoons for brushing
  • 1 teaspoon (t) coarse sea salt
  • 2 T cane sugar, plus 2 teaspoons for sprinkling
  • 5 T cold unsalted butter, cut into cubes
  • 2 T dried lavender
  • 2-3 T fresh rosemary, finely chopped

Directions

  1. In a medium measuring cup, add lavender and rosemary to the 1 cup heavy cream. Let steep in refrigerator for 20 minutes.
  2. Preheat oven to 375 degrees F.
  3. In a large bowl, gently mix flour, baking powder, 2 T granulated sugar, and salt.
  4. Cut butter until it resembles large, coarse crumbs, add to dry mixture.
  5. Add heavy cream mixture to dry ingredients. Fold ingredients together with a rubber spatula.
  6. Sprinkle some flour onto a clean surface and knead the dough together until dough ingredients are mixed. Form an 8’’ circle that is approx. 1/2” thick. With a hot wet knife, cut dough into 10 wedges. Transfer dough wedges to greased baking sheet.
  7. Brush tops of scones with remaining 2 T of heavy cream with a rubber pastry brush. Sprinkle with granulated sugar. Bake scones for 12 mins., or until edges start to become golden. Cool at least 5 minutes before serving.
