Just before the Summer Fancy Food Show this year, I discovered Kakosi Chocolate Company on Twitter while researching information on this year’s show in Manhattan. I was very impressed by Kakosi’s diverse category of chocolate products in their online catalog, including their very own line of Cocoa Butter and Shea Butter. I knew right away this company was very serious about their chocolate. I also noticed their unsweetened chocolate wafers (perfect for baking and the determined chocolatier such as myself). It reminded me of when I conducted a research project on chocolate, interviewing several prominent chefs, NYC-based professional chocolatiers, and authors, and when I tasted 100% dark, unsweetened chocolate for the first time. I love the bitterness, the raw and unrefined notes of pure cacao. It is the pure essence of raw cacao that is very rare these days. I had several friends and family members try the sample the 100% organic, unsweetened chocolate liquor wafers. “It is well worth a try,” says a friend. I found myself snacking on a small handful of wafers after dinner, for example.
Kakosi, based in Massachusetts, was originally founded by two brothers from Venezuela who started the company to help out their friends and family members who grew and sold cacao. Breakwater Foods acquired Kakosi in 2016.

Each chocolate product they have created hits all the right notes. My favorite was the Mayan Blend organic hot cocoa. I had mine with organic whole milk mixed with two tablespoons of their Mayan Blend hot cocoa powder. It was so delightful and creamy. I will admit that I sipped their hot cocoa five days in a row so far! There is a little hint of fresh cinnamon spice in each sip. Second, their chocolate mousse mix is exceptional. Their mousse mix should be a staple in everyone’s pantry. Why? Follow their simple mousse recipe and create restaurant-quality chocolate mousse in less time than you can imagine. Garnish with strawberries, raspberries or their own organic cacao nibs. If you wish to not make the entire package, split the recipe or use 4 rounded tablespoons per 1/2 pint cream for few servings.
For their cocoa powder, I use it in chocolate silk pies, cakes, brownies, and even smoothies. Shea Butter is great to use as an enhancement for lotions, soaps, and many more beauty care products in addition to Cocoa Butter. I use Shea Butter as a moisturizer for my legs post shaving. Use Shea Butter in cooking as a base to substitute butter or oil as a base for a sauce for pasta, rice, meat or vegetables. You can also spread Shea Butter on sandwiches, waffles, pancakes or toast as a healthy, vegan alternative. Shea Butter can also be used in cookie and cake recipes. Besides many cosmetic benefits, Cocoa Butter is great as an ingredient in pastries, cakes and cookies.
Cocoa Powder is a very versatile ingredient. I incorporate their organic cocoa powder in chocolate silk pies, brownies, cakes, soups, stews, and even smoothies. Lastly, the Dark Chocolate Covered Cacao Nibs are such a perfect midday treat. My husband brought some mini containers of the Kakosi Nibbles to work and they were such a hit with his co-workers. The slide-open tin container is ideal for those who want to save some nibs for later.
